You can do this by having a black background.jpg image.

Webcam Photobooth and PSRemote can do this using the toning option. DSLR Remote Pro and NKRemote can do this by defining a sepia picture style/control in the camera and then switching between these using the Ctrl+F1, Ctrl+F2 etc. keyboard shortcuts in full screen photo booth mode.
