is there any way to automatically set the new file name to use only the last two digits of the year ("05-05-18" rather than "2005-05-18")?

Try %y-%m%D

%y gives the last two digits of the year and %Y gives all four digits. You can display a list of the various tokens by going to DLPro's preferences and pressing the "Show tokens" button.
